Designed by chef Wayne Sullivan (@chefwayner) and named after the Japanese word for ‘slice’, the long, gently-curved blade of the IOShen Suraisu Slicer is offset by a medium-sized handle that makes it lighter than other knives of this size allowing you to slice with maximum precision. Because it’s lightweight, the carefully engineered curve is even more important, allowing a natural arm movement for unfailingly accurate slicing and it has an angled, oriental Tanto tip for precision.
The Suraisu slicer has had a lot of praise from some big names within the food industry. Michelin starred chef Daniel Clifford calls it “the best slicer I have ever used” and Mark Poynton is also a big fan: “the most perfect knife I’ve ever had the pleasure to pick up”. The food blogger The Food Snob UK talks about using it for everything from slicing tomatoes to cutting wafer thin slices of carpaccio from beef fillet.
