
Truth be told, I never used to like broccoli. My wife told me I had to find a way to like it and I still didn’t like it. My five year son told me it was good for me and I still didn’t like it. My three year old son told me “even I eat it Daddy” to really shame me. So when it continued to turn up in the Abel and Cole orders I decided I had to find a way to make the stuff taste good. Turns out there are more than a few ways and broccoli and stilton soup is the perfect start if you like blue cheese.
If you have a thermomix it’s as simple as this: blend it all up with a good English stilton, season well and it tastes amazing.
I’ve even surprised myself that I know love it just as it is – steamed and basted with butter, pepper and salt, particularly if it’s tender stem, but if you’re still getting accustomed and you love your cheese, this is a great way to begin.

Equipment: thermomix (we have the TM5)
INGREDIENTS
broccoli and stilton soup – thermomix:
- 1 onion, peeled and quartered
- 20g butter
- 300g broccoli, stems cut into chunks, florets reserved
- 300g milk
- 400g vegetable stock
- 150g stilton
- optional: nutmeg
METHOD
Throw your onion and butter into the thermomix bowl. Season and mix, 5 sec/speed 5.
Scrape down the sides and cook 5 minutes/100C/speed 1.
Add your broccoli stems. Cook 1 minute/100C/speed 1.
Pour in your milk and stock and cook 12 minutes/100C/speed spoon.
Add broccoli florets and 120g stilton. Cook 5 minutes/100C/speed spoon.
Blend 50 seconds/speed 8.
Taste and season.
Serve with a sprinkling of stilton and a grating of nutmeg.
Or leave to cool before refrigerating for up to 3 days.
