A very simple but delicious warming winter soup made even easier with a thermomix. The whole thing takes thirty minutes, uses staple household ingredients and this thermomix parsnip and carrot soup is as good immediately or reheated over the next few days.
what you’ll need
Equipment: thermomix (we have the TM5)
parsnip and carrot soup – thermomix:
- 20g butter
- 1 onion
- 3 garlic cloves, crushed and sliced
- handful of thyme leaves
- 4 large carrots, cut into chunks
- 4 large parsnips, cut into chunks
- 1 litre vegetable stock
- 50ml double cream, optional
- garlic parmesan croutons, optional
Throw the onion and butter into the thermomix bowl and mix, 5 sec/speed 5.
Scrape down the sides, season and cook 5 minutes/100C/speed 1.
Add the garlic and thyme. Cook 3 minutes/100C/speed 1.
Tip in the parsnips and carrots. Cook 30 seconds/100C/speed 1.
Pour in the stock. Cook 20 minutes/100C/speed 1.
Blend 50 seconds/speed 8.
Optional: pour in the double cream and mix, 10 seconds/speed 2½.
Serve immediately: season to taste, garnish with more cream and garlic parmesan croutons.
Or leave to cool before refrigerating for up to 3 days.
