Eat paleo but feel like you miss out on all those beautiful, delicious breadcrumbed dishes. No need to worry as with a few kitchen staples you can create your very own paleo breadcrumbs.
What do a scotch egg, a chicken kiev and a ball of arancini have in common? That’s not the start of a joke but something very serious in our household – breadcrumbs. There is little doubt that their addition can add so much to so many different foods.
Despite their deliciousness though, they are most certainly not paleo and without them those following that path appear to miss out on some very good dishes. However, all is not lost – after a long search and several failed experiments we managed to land upon something almost as good (I don’t think you will ever truly match a proper breadcrumb crust). A handful of almonds, blitzed up to a breadcrumb like consistency, and a few pinches of your favourite dried herbs and spices gives you a very similar result and taste to a simple breadcrumb – and it’s completely paleo!
We like to blitz whole almonds but you can easily buy almond flour from most supermarkets.
what you’ll need
Equipment: mixing bowl. blender.
paleo breadcrumbs: go organic if you can
- 250g almonds (ideally not blanched for a truer breadcrumb consistency)
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- optional 1/4 teaspoon dried oregano/parsley/paprika/any herbs or spices you wish
Toss your almonds into a blender and whizz up to your preferred consistency.
Add the rest of the ingredients and mix well.
Use straight away or store in a sealed container.
