Beautifully succulent steak fajitas: wood fired and thickly sliced steak, served in a wrap with caramelised onions, sweet toasted peppers, spicy salsa and creamy guacamole – all roasted fast in the wonderful Uuni 2S. Not bad for a portable pizza oven!
So far I have cooked everything from homemade savoury pizzas, sweet dessert pizza’s, all cooked in 90 seconds or less, to moroccan flatbreads and harissa lamb neck fillets in my Uuni 2S. Not only that, but the oven travelled with us across the UK, on the ferry and to the beaches of Jersey. So, what was next? How do steak fajitas with peppers and onions sound?!
So simple and easy to cook with the same setup as for pizza but cooked in a caste iron pan – make sure you have an oven glove to hand!
Toss your vegetables into the pan for a few minutes then the steak goes on top. I went very simple here with just a little seasoning but feel free to use a favoured rub for that little bit extra. The vegetables caramelised beautifully and the steaks carried a lovely subtle wood fired flavour. Add a little guacamole and salsa and you have the making of a perfect fajita (I even used the top of the uuni to warm my wraps up) – if you’re looking to show off the versatility of your pizza oven to friends, then this is a great way to start!
Sorry for the lack of photos. We were on the beach and got distracted by lots of questioning passers by – will make sure to get more when I next cook this at home.
what you’ll need
Equipment: caste iron pan. Pizza oven (Uuni). Oven gloves.
steak fajitas – uuni: serves 4
- 2 large beef steaks – we went for sirloin
- 1 red pepper, thickly sliced
- 1 green pepper, thickly sliced
- 1 large onion, thickly sliced then broken apart
- olive oil
- tomato salsa
- whatever you want to fill a fajita with
Light up your Uuni/pizza oven and bring it up to temp.
Toss your peppers and onions in olive oil and little salt and pepper. Throw half of them into your pan and place in the uuni. Make sure you have the lid on whenever you are cooking. I would suggest dividing the veg and steaks into two separate cooks – each one will make 3-4 wraps so one each.
Season your steaks with salt and pepper.
After 2 minutes, remove the pan and give it a toss before placing back on the stone for a further 1 minute.
Lay 1 steak on top and cook for 5-6 minutes before flipping the steak.
Cook for a further 5-6 minutes. Internal temperature of the steaks should be around 54-57C for medium rare.
Remove from the oven and rest for 10 minutes in the pan.
Thickly slice the steak and prepare your fajitas.
I laid the wraps on top of the uuni for 30 seconds or so to warm up.
Repeat with the rest of the ingredients for a second fajitas each!
