Thermomix bread sauce with a twist

Bread sauce is one of the best parts of winter poultry dishes. It goes beautifully with chicken, pheasant and turkey to name but a few and is probably my favourite accompaniment. The thermomix makes it so easy to throw together; with a few kitchen staples it takes just 10 minutes to have a beautiful sauce waiting for you on the table.

And for a bit of a twist, a little horseradish can give a great kick that heightens and accentuates the flavours of the sauce.

I’m still amazed at how good it tastes. We had a couple of friends over for a Christmas turkey fattie the other day, one of whom didn’t usually like bread sauce. But having helped throw a few things into the thermomix he felt he had to try some – before long he was a total convert!

INGREDIENTS


thermomix bread sauce:
  • 80g bread
  • 300g milk, plus more if needed
  • 1 small onion
  • 50g butter
  • salt
  • pepper
  • 1 tsp horseradish sauce (optional)

METHOD


If, like us, you prefer a smooth bread sauce then throw your bread into your thermomix bowl and blitz at speed 10 for a few seconds until crumbed. Tip out and reserve. You don’t need to clean the bowl. If you prefer a lumpy sauce then slice into cubes and set aside.

Place all the other ingredients except the horseradish, including salt and pepper into the bowl. Mix 10 seconds/speed 8.

Scrape down the sides with a spatula before cooking for 5 minutes/100C/speed 4.

Add the breadcrumbs and a spoonful of horseradish sauce and mix for 30 seconds/speed 3/reverse blade.

Add a little milk if the sauce is too thick. Taste and add a little more seasoning if necessary.

Leave lumpy or mix for a few seconds at speed 6 for a smooth sauce.

Pour into a serving bowl. The sauce will thicken as it rests. Serve warm.
